Sushi 101
Rice Ingredients
•1-1/2 cups NishikiRice
•2 cups Water
Rice Prep Ingredients
•1 cup Water
•1/2 cup Rice vinegar
•2 teaspoons Sugar
•Dash of salt
Salmon Mango Hand Roll Ingredients
•1/2 nori sheet
•1/8 cup cooked cooked shortgrain rice (Nishiki)
•2 tbsp small cube Salmon sashimi
•2 tbsp cup small cube Mango
•1 tbsp cup Whole Kernel Corn
•1 tbsp cup small cube Cucumber
Sauce
•1 tbsp Ponzu Sauce
•1/2 tsp Yuzu Sauce (or lemon)
•Sprinkle of Wasabi salt
Philly Roll Ingredients
•1 nori sheet
•1/2 cup cooked shortgrain rice
•1 oz Cream Cheese (block cream cheese)
•1 oz Salmon sliced long
•2 slices avocado
•2 tsp sesame seeds
California Roll Ingredients
•1 nori sheet
•1/2 cup cooked shortgrain rice (Nishiki)
•1 oz Crab (faux)
•2 slices Avoocado
•2 strips Cucumber
Mise En Place (Prep)
•Cook rice
Salmon Hand Roll prep
•Cube salmon sashimi (1/4"-1/2" cube size)
•Cube mango (1/4"-1/2" cube size)
Philly Roll prep
•Cut 2 strips of cream cheese from block lengthwise (height/width = 1/4"-1/2")
•Cut 2 strips of salmon from block lengthwise (height/width = 1/4"-1/2")
•Cut 3 thin slices of avocado
California Roll prep
•Cut 3 thin slices of avocado
•Pull apart 1 faux crab leg lengthwise into 3-4 pieces
•Cut 3 thin slices of cucumber
Tools You’ll Need
•Cuting board
•Long sharp chef's knife or a yanagiba knife
•Plastic wrap
•Sushi roll mat (to be provided)
•Small bowl with cold water (for dipping hands)
•Small wash cloth
•Hand towel
•Hand wipes
Salmon Mango Hand Roll Directions
1.Cut a sheet of Nori in half
2.Place ½ nori sheet lengthwise left to right
3.On the left side, lay down a thin layer of rice in a v shape on the left side
4.Place a scoop of filling in the center starting at the top coming down center
5.Lightly wet the nori in the bottom right from the middle over to the right (1/4 inch in height)
6.Take the lower left nori that does not have rice on it and fold it over the bottom of the rice
7.Roll from left to right forming a funnel sealing the hand roll with the wet nori section
Philly Roll Directions
1.Place a layer of plastic wrap on your sushi mat
2.Place half a sheet of Nori (seaweed) shiny side down, rough side up
3.Wet your hands and spread a thin layer of rice all over nori
4.Pick up the nori sheet & rice and flip it over
5.Place strips of salmon, avocado & cream cheese along the top side of the nori
6.Using the sushi roll mat, lift up on the top side curling it in 1/3 of the length of the nori sheet
7.Press down on sushi roll mat
8.Pull sushi roll mat and plastic wrap up
9.Using the sushi roll mat, lift up on the top side curling it in 1/3 more
10.Pull sushi roll mat and plastic wrap up
11.Apply a small amount of water on the nori at the end that does not have any rice on it
12.Using the sushi roll mat, lift up on the top side curling it 1/3 more
13.Pull up mat and plastic wrap
14.Roll sushi roll in plastic wrap using sushi mat roll
15.Firm up the roll making a square tube of the sushi mat roll
16.Remove the sushi mat roll
17.Wet knife and cut roll in half
18.Wipe knife, then wet it and cut halves into quarters
19.Cut quarters into eighths
20.Remove plastic wrap placing maki on to plate
California Roll Directions
1.Place a layer of plastic wrap on your sushi mat
2.Place half a sheet of Nori (seaweed) shiny side down, rough side up
3.Wet your hands and spread a thin layer of rice across all over Nori
4.Sprinkle roasted sesame seeds across rice
5.Pick up the nori sheet with rice on it and flip it over
6.Place strips of crab, cucumber along the top side of the nori
7.Using the sushi roll mat, lift up on the top side curling it in 1/3 of the length of the nori sheet
8.Press down on sushi roll mat
9.Pull sushi roll mat and plastic wrap up
10.Using the sushi roll mat, lift up on the top side curling it in 1/3 more
11.Pull sushi roll mat and plastic wrap up
12.Using the sushi roll mat, lift up on the top side curling it 1/3 more
13.Pull up mat and plastic wrap
14.Apply thin layers of avocado across top of sushi roll
15.Roll sushi roll in plastic wrap using sushi mat roll
16.Firm up the roll making a square tube of the sushi mat roll
17.Remove the sushi mat roll
18.Wet knife and cut roll in half
19.Wipe knife, then wet it and cut halves into quarters
20.Cut quarters into eighths
21.Remove plastic wrap placing maki on to plate
