Okonomiyaki Ingredients
Batter Ingredients
•250g bag of Okonomiyaki Ko (premixed batter flour)
•3 eggs
•300-400ml—cold water
•½ Cabbage finely chopped
•1-1/2 cups—Puffed Rice
•½ cup—Beni Shoga (chopped pickled ginger)
•½ cup chopped scallions
•½ cup—bonito flakes
Chicken Karaage Ingredients
Marinade Ingredients
•6 minced Garlic Cloves
•1-2 tbsp grated Ginger
•1-2 oz Shio Koji
•4 Chicken Thighs
•Salt & Pepper
Chicken Karaage
Frying Ingredients
•½ cup milk
•1 oz Soy Sauce
•1 egg beaten
•100g Potato Starch
•3 cups Vegetable Oil
Topping Ingredients
•Okonomiyaki sauce
•Kewpie mayonnaise
•Bonito flakes
•Scallions
Mise En Place (Prep)
•½ Cabbage finely chopped
•½ cup finely chopped Beni Shoga (chopped pickled ginger)
•½ cup chopped scallions
•6 minced Garlic Cloves
•1-2 tbsp grated Ginger
•1-2 oz Shio Koji
•4 Chicken Thighs cut into 1”-2” bite sizes
•3 eggs beaten
•1 egg beaten
Tools You’ll Need
•Nakiri or chef’s knife
•Cutting board for meat
•Cutting board for vegetables
•3 Medium size bowls
•1 large mixing bowl
•1 waffle maker or 10-12’ fry pan
•1 Japanese fryer or deep fryer or 10”-12” fry pan
•1-2 whisks (or forks)
•1 silicone spatula
Okonomiyaki Directions
Batter
•In a large mixing bowl, pour in okonomiyaki flour, then whisk in eggs and water
•Fold in chopped cabbage, puffed rice, Beni Choga (chopped red pickled ginger), chopped scallions, bonito flakes
•Pour batter into waffle maker and cook until done (cook time may vary by waffle maker
Chicken Karaage Directions
Marinade Directions
•Cut up chicken into 1”-2” cubes
•Mix minced garlic, ginger, and shio koji in a Ziploc gallon bag
•Add cut up chicken thighs and salt & pepper to marinade bag and place into refrigerator for about an hour (you can let this marinade for more time)
Frying Directions
•Pour oil into fry pan (or Japanese tempura pot) heating oil up to 400 F
•Take chicken out of marinade placing into a bowl
•In a medium size bowl, whisk together milk and soy sauce
•In another medium size bowl, dry whisk potato starch and sesame seeds
•
•Place several pieces of chicken into milk & soy blend, then place into potato starch & sesame seed dry mix, and then place into hot oil (repeat until all chicken is in pan)
•Fry chicken until it is brown
•Place chicken on to paper towels
Toppings and Plating
Topping Ingredients
•Okonomiyaki sauce
•Kewpie mayonnaise
•Bonito flakes
•Scallions
Plating
•Place 2-4 pieces of chicken karaage and ¼ -½ okonomiyaki waffle onto a medium size plate (tapas size plate)
•Generously drizzle on okonomiyaki sauce across chicken karaage and okonomiyaki waffle, then Kewpie Mayo and finish with bonito
