Option A)  Pre-Packed Ingredients 

Tools You’ll Need

•Cutting board for veggies

•Cutting board for meats

•Chef or Santoku knife

•Bowls for prep work

•Large bowl for rice

•Measuring cups

•3-4 qt pot or rice cooker

•Donabe,k nabe, or cooking pot

•Flower cutting mold for carrot (optional)

•Hand strainer to strain off chicken scum

•Hand towel

•Wet hand towel

•Water bowl

Zouni Soup Ingredients

•3-1/3 cups Water

•3 tbsp Dashi

•2 tbsp Soy Sauce

•3-4 Chicken thighs cubed

•1/3 Nappa Cabbage

•4-6 Shiitake Mushrooms 

•1 pack Enoki Mushrooms

•1 Carrot

•Kamaboko Fish Cake

•4-5 pcs Mochi Rice Cake (hard)

Rice Ingredients

•1-1/2 cups Nishiki Rice

•2 cups Water

Onigiri Ingredients

•1-2 tsp Shiso Furkikake

•1-2 tsp sugar

Mise En Place (Prep)

•Cook rice

•Cube chicken (1"-2" pcs)

•Cut Enoki mushroom roots off and rinse

•Cut Shiitake mujshrooms into 1/3 pcs

•Chop up carrots into 1/4" slices (use flower cutting mold if preferred)

•Cut 1" x 3" strip of nori (dried seaweed sheet)

Zouni Soup Directions

•Pour water, soy sauce and dashi into a donabe, nabe or other cookingpot, heating to a boil, then turning down to low-medium level

•Cook chicken first for 8+ minutes skimming out scum with handle skimmer

•Add vegetables and lastly Mochi into pot and cook for 7+ minutes

•For decoration, add Kamaboko fish cake before serving

Onigiri (rice ball) Directions

•Shake Shiso Furikake across rice in bowl mixing with rice paddle or hands (if with hands, then dip hands in water first)

•Dip hands into water and then grab about a 1/4 cup of rice (eye it) 

•Gently form an egg shape or cylinder shape with hands that is 2"-3" in length and about 1-1/2"-2" in diameter 

•Wrap cylinder/egg shape in pre-cut nori sheet
