History of Gyoza

The Gyoza is a direct descendant of the Chinese Jiaozi dumpling.

  • 2nd Century AD- First references in China

  • 1930’s- Japanese occupation of Manchuria Japanese soldiers brought it back

Major Regions for Gyoza

  • Hamamatsu

  • Utsunomiya

  • Fukushima

  • Tokyo (Hanetsuki Gyoza)

Difference

  • Thinner wrap

  • More garlic

  • Can be browned (yaki-gyoza), boiled (sui-gyoza) or deep-fried (age-gyoza)
