  • Recent food dish- 1961 by restauranteur Kazuo Yamagishi in Tokyo for his restaurant Taishoken

  • Over 100 locations in Tokyo today

  • Hiroshima style is even more recent

  • Warm spicy broth

  • In the US, mostly in LA
