A deeply comforting expression of Japanese recipes, Savory Pork & Gyoza Hot Pot is built on a traditional dashi broth enriched with soy sauce and mirin, then gently simmered in a donabe. Kurobuta sausage lends savory depth as it renders, while daikon radish, kabocha pumpkin, carrot, and shiitake mushrooms create a hearty, seasonal foundation. Napa cabbage, bok choy, and oyster mushrooms soften into the broth, and pork and vegetable gyoza are added just before serving. Finished with awase miso stirred in off heat, this hot pot reflects the warmth, balance, and communal spirit at the heart of Japanese home cooking.
