Last night’s cooking demo brought together one of Japan’s most beloved comfort foods—curry—with the communal warmth of donabe cooking. This Golden Curry Chicken Nabe layered flavor at every stage: sautéed chicken and onions with finely chopped curry roux, a dashi-enriched broth balanced with sake, mirin, and soy sauce, and a finishing touch of fresh ginger for lift.


Root vegetables simmered to fork-tender perfection while napa cabbage, mushrooms, and tofu absorbed the rich curry broth. Udon noodles, added at the end, completed the dish—creating a deeply satisfying and approachable introduction to Japanese recipes that are both comforting and refined.
